So the other day, I was looking for something to eat for lunch. After much contemplation, I decided to go to Subway, but, in the end, I was too lazy to go through the "trouble" of watching someone make me a sandwich.
Instead, I decided to whip up some pasta. I was just going to have pasta with olive oil and basil. Ultimately, though, what I threw together ended up being beyond my wildest pasta dreams (not that I have a large repetoire of them or anything).
Here's the recipe: sautee half of a red onion and a few minced cloves of garlic. Once they're somewhat translucent, add most of a frozen bag of spinach and a chopped up tomato. Once done to your liking, add in some more olive oil, some basil (I like the frozen cubes), and salt and pepper. Spoon over whatever kind of pasta you have hanging around.
It's about impossible to screw up, and you can tweak the ratios of the ingredients super-easily to suit your own taste.
